Blackberry Sage Lemonade
A fantastic way to celebrate spring and the warmer days. Fresh or frozen berries are fine, but be sure to use fresh sage.
Blackberry simple syrup
3 cups water
3 cups granulated sugar
½ cup blackberries
Lemonade
2-1/4 cups lemon juice
1-1/4 cup blackberry simple syrup (above)
8 cups water
¼ cup granulated sugar
6 oz blackberries
5-6 leaves fresh sage
4-5 sprigs sage blossoms (optional)
Make the Simple syrup by combining the simple syrup ingredients in a medium saucepan. Bring mixture to a boil, then reduce heat to medium-low and continue simmering until the blackberries have started to burst and the syrup is slightly reduced. Remove from heat and allow to cool until syrup is just warm to the touch. Using a fine-mesh strainer, strain the syrup to remove pulp and seeds. Store in an airtight container for up to 2 weeks.
For the lemonade: combine the ¼ cup sugar, sage leaves and half of the blackberries in the bottom of a large pitcher. Muddle the ingredients together with a muddler or wooden spoon, until the blackberries have colored the sugar. Pour in the 1-1/4 cup blackberry syrup and lemon juice. Stir to combine. Once the granulated sugar has completely dissolved, pour in the water and stir until well mixed. Chill.
Serve over ice with additional berries and sage blossom sprigs for garnish.
