Chorizo-Stuffed Patty Pan Squash

Ingredients:

1 lb chorizo from Rose Wagon Ranch, browned

3-4 large patty pan squash

1/2 cup shredded cheese

Cut the core out of the patty pan squash. Using a spoon, scoop out a hollow in the middle of the squash big enough to hold a serving of chorizo. Stuff the chorizo in the squash.

Place on a baking sheet and bake at 425 F for 30-40 minutes or until the squash is fork tender. Sprinkle shredded cheese over the top and bake for another 5 minutes.
